There is nothing better than adding a new weeknight meal to the rotation, something easy that everyone enjoys, like this week’s recipe spotlighting local ingredients.

For the sausage in the recipe, try something local like the bison sausage from Memphis Ranch Bison available at the Boulder Farmers Market. Sweet cabbage is also available from many of the farmers, along with onions.

Apples have been missing from the Boulder and Longmont markets this year because of a late-season frost in Delta County. However, the Boulder County Farmers Market Food Hub has sourced some Colorado-grown apples available online. Visit the store to shop locally year-round.  Apples and apple cider are also available at Boulder County roadside farm stands.

The Boulder and Longmont farmers markets will continue bringing fresh, local produce to the community every Saturday through Nov. 21.

Seared Sausage with Cabbage and Apples

  • About 1 tablespoon olive oil
  • 4 sausage links
  • 2 small apples, cored, halved (peeled or unpeeled)
  • About ½ red onion, sliced
  • About ½ head red cabbage, cut into ½-inch slices
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup Colorado apple cider
  • 2 tablespoons apple cider vinegar

Heat oil in a large cast-iron skillet over medium-high heat. Add sausage and cook until golden brown. Transfer to a plate.

Reduce heat to medium and add apples, cut-side down. Add onion and cabbage to the skillet, seasoning with salt and pepper. Cook for about 4 minutes or until apples are golden brown.

Flip apples. Return sausage to the skillet; add cider and vinegar. Turn down heat to a simmer, stirring occasionally, until apples are tender, about 20 minutes.

What’s fresh this week? Farmers are bringing winter squash, beets, radishes, fennel, kohlrabi, greens, carrots, herbs, broccoli, cauliflower, meat, eggs and more to the Boulder and Longmont farmers markets this week.
